Old House Tortilla Soup Recipe

Tortilla soup is one of those New Mexican dishes you crave on an autumn afternoon. Luckily, it can be found on restaurant menus across the state and is easy to make at home!

This delicious tortilla soup recipe is a favorite of Eldorado Hotel & Spa Executive Chef Anthony Smith.

Old House Tortilla Soup

Makes ½ gallon, serves 8 people.

Ingredients:
3 pints Chicken stock
½ Yellow onion
1 pint Tomato juice
2 oz Lime juice
1 tsp Oregano
3 Cloves garlic minced
2 tsp New Mexico red chile powder
6 Corn tortillas
½ Bunch cilantro

Preparation:
Put all ingredients above in pot. Bring to a boil and simmer for 30 minutes.
Blend smooth until smooth. Add salt and pepper to taste.

Add following to soup:
8 oz Grilled diced chicken
1 cob Fresh corn kernels

Serve with sour cream & queso fresco.
